I have just purchased 20gb of iCloud Storage. I have also shared all of my photos to my iCloud. If I delete the original phots from my camera roll, will they still by on my iCloud?

Your photos will be deleted from your device, the cloud and any other devices using the iCloud photo library. best bet is to sync your photos with your computer every so often.
If you select delete you should see a message on your iPhone that says: "This photo will be deleted from iCloud photo library on all your devices." this is on IOS 8.3
Import them to your computer before deleting them from your Camera Roll:
